Comment out the pinned "deeplabcut-live>=2.0.0" dependency and add three optional extras that install the latest code from the DeepLabCut GitHub repo: "live-latest" (main branch), "live-latest-pytorch" (main branch with pytorch extras, includes timm and scipy), and "live-latest-tf" (main branch with TF extras). This lets developers/testers install the upstream repo directly for testing without changing stable version constraints.

Temporary installation procedure
Allows for easy(ier) installation from latest DLC-live (from Git) while we are finaliazing the DLC-live 2.0 release.
Purpose
Since #38 needs dlclive >= 2.0.0, it is currently uninstallable with uv.
This PR adds a temporary alternate route to install from git instead
Usage
Allows for a straightforward uv install with :
uv pip install -e .[live-latest]OR
uv pip install -e .[live-latest-pytorch]OR
uv pip install -e .[live-latest-tf]
