This PR adds documentation for the X-MCP-Lockdown header to the remote server configuration guide, enabling users to control lockdown mode for the remote GitHub MCP server.
- Documents the new
X-MCP-Lockdownheader, which is equivalent to the existingGITHUB_LOCKDOWN_MODEenvironment variable for the local server - Adds an example showing how to configure the lockdown header alongside other optional headers
- Maintains consistency with existing header documentation patterns (X-MCP-Readonly, X-MCP-Toolsets)

I didn't add X-MCP-Lockdown to the remote server yet so let's remove it for now? I will prep a separate pr to update it. 🙏
